HOW TO MAKE CILANTRO LIME GRILLED STEAKS RECIPE:

  1. Place all of the ingredients the cilantro, vinegar, garlic, paprika, cumin, onion powder, lime juice, brown sugar, olive oil, and parsley into a food processor. Start pulsing the mixture and drizzle in the olive oil until it is pureed.
  2. Place steaks in a ziplock bag. Pour marinade over the steaks making sure it covers all sides and let sit in the fridge over night. Turn the bag over about half way through the marinating process.
  3. Preheat grill on high, turn to medium low heat and oil the grates. Cook steaks until desired doneness (pull steaks at 130 degrees F for medium-rare), let rest for about 5 minutes. While resting place 2 Tbls butter on each steak, letting it melt into the meat. Serve and enjoy!

FREQUENTLY ASKED QUESTIONS ABOUT THIS RECIPE:

CAN I USE THIS MARINADE ON OTHER CUTS OF STEAK?

Absolutely! This versatile marinade brings out the best in various cuts, whether you’re working with a luxurious tomahawk steak, a classic new york strip, or even a simple filet mignon. I’m also a fan of the simple sirloin steak. I know the thinner steak tends to dry out easier, but this marinade can really help with that. Sometimes delicious steaks are just about practice!

HOW LONG TO MARINATE?

Ideally, let your steaks marinate overnight in the refrigerator to soak up all those wonderful flavors. A minimum of a few hours will still yield delicious results. Longer is always better in my opinion, especially depending on the thickness of the cut.

ANY ADDITIONS?

Whether in the marinade or just on top of the steak, these additions can work wonders.

  • A sprig of fresh rosemary or thyme for an aromatic twist
  • A dash of soy sauce for depth
  • Sliced onions or mushrooms grilled alongside for extra savoriness
  • A dollop of garlic butter for richness
  • Crumbled blue cheese for a sharp, creamy topping
  • Diced avocado for a smooth, cool contrast
  • A sprinkle of crispy bacon bits for a salty crunch
  • Cherry tomatoes for a burst of sweetness
  • A pat of compound butter infused with herbs
  • Drizzle of balsamic reduction for a sweet and tangy finish

ANY SUBSTITUTIONS?

If you’re in search of the perfect ribeye steak, these subs can be your friend.

  • Avocado oil or canola oil for olive oil if grilling at very high temperatures
  • Apple cider vinegar instead of red wine vinegar for a sweeter tang
  • Honey as a natural alternative to brown sugar
  • Dried herbs if fresh cilantro and parsley aren’t available
  • Coconut sugar for a healthier sweetener option
  • Lemon juice instead of lime for a different citrus note

HOW TO STORE:

Refrigerator: Store any leftover steak in an airtight container for up to 3 days.

Freezer: Wrap cooked steaks tightly in aluminum foil, then place in a freezer bag. Freeze for up to 3 months. Thaw in the refrigerator before reheating to enjoy again.

DANA’S TIPS AND TRICKS:

  • Before grilling, let your steaks reach room temperature to ensure even cooking.
  • Preheat your grill to medium-high heat to achieve the best sear and those grill marks we all love.
  • Use a meat thermometer to check for the perfect level of doneness, aiming for an internal temperature of your steak around 130°F for medium-rare.
  • Let your steaks rest under aluminum foil after grilling to retain their juices and achieve the perfect tenderness.
  • For thicker steaks, finishing in a low-heat oven can help reach the desired doneness without overcooking the outside.
  • Experiment with additional toppings like a pat of butter, fresh herbs, or even a sprinkle of sea salt to enhance the flavors further.

This Cilantro Lime Marinated Grilled Ribeye Steak recipe is not just about enjoying a meal; it’s about creating an experience that’s both delicious and memorable. Perfect for any meat lover looking for a fresh twist on the classic steak, it combines the best of both worlds: the deep, savory flavors of ribeye with the bright, fresh zing of cilantro and lime. So fire up that grill, gather your friends and family, and get ready to enjoy one of the best ribeye steaks you’ve ever had.
