fried milk recipe | custard milk fried dessert | crispy deep-fried milk with step by step photo and video recipe. custard recipes or milk-based dessert recipes are always a popular choice. these are generally rich and creamy in texture and taste and therefore well appreciated with all age groups. this particular recipe is similar to above-mentioned dessert, yet unique in its own way due to the combination of milk and deep-frying cooking.
well, the fried milk recipe is a very common dessert recipe, particularly in western cuisines. it is made with full cream milk, cornstarch and sugar and later coated with breadcrumbs before deep frying. but this recipe comes with a twist. instead of cornstarch, i have used custard powder which is basically a combination of milk powder and cornflour. thus it helps to get thicker, denser and creamier as compared to the former one. having said that, this is not a traditional one and if you prefer to have a simple milk-based one you may prefer to. you may just skip the custard powder and use cornstarch and sugar powder.
furthermore, i would like to add some additional tips, suggestions and variants to this fried milk recipe. firstly, in this recipe, i have added ½ cup sugar to this sweet dessert recipe as the sugar in the custard powder is not sufficient for this dessert. but if you prefer, you can skip the sugar. secondly, this recipe is prepared without egg and particularly for coating, i have skipped it. but if you are a comfortable and egg eater you should use it instead of maida and cornflour slurry. lastly, while deep frying, you have to be extra careful as there are high chances of bursting or oozing out.

for custard:
- ¾ cup custard powder, vanilla-flavored
- ½ cup sugar
- 3 cup milk
for slurry:
- ½ cup maida
- ¼ cup cornflour
- water, for slurry
other ingredients:
- 1 cup panko breadcrumbs
- oil, for frying
Instructions
how to make the eggless custard:
firstly, in a large bowl take ¾ cup custard powder, ½ cup sugar, and 3 cup milk.
whisk and mix well until sugar melts and cornflour is well combined without any lumps.
transfer the custard mixture into large kadai.
stir continuously, and cook on medium flame.
keep cooking until the mixture thickens and starts to turn glossy.
once the mixture turns to paste consistency, transfer the mixture to a tray.
make sure to line the tray with baking paper to prevent it from sticking.
level up uniformly, and refrigerate for 2 hours or until it sets completely.
after 2 hours, the custard has set well and is ready to cut into pieces. keep aside.
how to make and fry the milk custard:
in a bowl take ½ cup maida, ¼ cup cornflour, and prepare a smooth slurry.
dip the custard cube into a slurry and then roll in breadcrumbs.
double coat the custard piece to prevent it from melting while frying.
now deep fry in hot oil, keeping the flame on medium.
stir gently without damaging the pieces.
fry until the custard turns golden brown and crisp.
drain off the pieces to absorb excess oil.
finally, enjoy fried milk custard with chocolate sauce.
