How to Make Meatloaf in a Ninja Foodi

Aunt Lou here.

Momma’s meatloaf always has been and always will be one of my favorite recipes. So much so that I made it into a crock pot recipe AND had a blast doing a cooking video of the crock pot recipe with Mikey. It also freezes well, so if you don’t need as many servings, you can always freeze some to have a quick dinner for later! It only makes sense that I would give it a try in my Instant Pot! You guys are gonna LOVE this! Meatloaf has never been so easy!

Ingredients

  • 1 lb ground beef
  • 1 cup oats or crushed crackers
  • 1 large egg
  • 1/2 large onion diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup ketchup plus some for topping
  • 1 piece aluminum foil
  • 1 cups water

Instructions

  • Mix together your ingredients (except the extra ketchup for topping and water) and mold into a loaf.

  • Make a dent down the middle of your loaf.

  • Place your loaf in a greased “boat” made of aluminum foil.

  • Top your meatloaf with ketchup.

  • Pour your water in your 6-quart Instant Pot.

  • Place your loaf boat in your instant pot (making sure the sides are much higher than the water).

  • Place the lid on your Instant Pot and seal. Set on the meat setting for 30 minutes.

  • Let it naturally release for 10-15 minutes. Quick release and serve! (If desired, put you loaf boat on a cookie sheet and broil on hi for about 90 seconds to 2 minutes to crisp up the edges and take your ketchup to the next level!)

      Hi Jessica!

We use “old fashion oats” for this recipe. No grinding necessary! They work as a binding agent to hold the meatloaf together.

      Enjoy!

      Hi Tonya!

I haven’t tried doubling this recipe. We test every recipe before posting it, especially with the Instant Pot, and don’t like to make recommendations without trying it first. Be sure you use a meat thermometer when you try it the first time to ensure your meatloaf has reached safe temperature. If you give it a try, let me know how it goes!

      HI Vanessa!

I’m so sorry I missed your comment last night. Due to the high volume of comments we receive, we are not able to answer them all immediately. For future reference, you put the ketchup on top of your meatloaf right after you put your loaf in the aluminum foil “boat”. I have updated the recipe to show that. I hope you enjoyed it!

FAQs

Can I use my Instant Pot as a slow cooker? ›

Press the "Slow Cook" button to select the slow cooking function. Set the cooking time and temperature. The Instant Pot has three temperature settings for slow cooking: low, medium, and high. Use the "Adjust" button to choose the temperature and then use the "+" and "-" buttons to adjust the cooking time.

Why milk instead of water in meatloaf? ›

Is it better to add milk or water in meatloaf? Without question, it is better to use milk in meatloaf. The added fat adds richness and moist texture to the meatloaf, and the added milk proteins encourage additional browning reactions (which means more flavor).

Is Instant Pot better than crock pot? ›

An Instant Pot does have more functionality (like sautéing, pressure cooking, slow cooking, and acts as a rice cooker, steamer, and warmer!) than a slow cooker, but if you don't plan to use all of its extra functions and just prefer the simplicity of a slow-cooker, then you might prefer a Crock-Pot.

Do you leave the vent open on an Instant Pot when slow cooking? ›

Another tip, taken from an Instant Pot Facebook group, is to open the valve all the way on your Instant Pot lid when slow cooking. This allows some moisture and steam to release and keeps the Instant Pot from overcooking your slow cooker recipes.

Do I need to seal my Instant Pot when slow cooking? ›

Do I vent the Instant Pot when slow cooking? I wouldn't recommend using your regular Instant Pot lid when slow cooking. Grab a tempered glass slow cooker lid so some steam can escape while it's cooking or cover the pot in aluminum foil instead.

Which is cheaper to run Instant Pot or slow cooker? ›

Due to a shorter overall cooking time, the Instant Pot (pressure cooker) turns out to be the most energy-efficient way to achieve that tender, slow-cooked result.

Is pork shoulder better in Instant Pot or crock pot? ›

Slow cooking the meat means it never has the chance to toughen up and will be extra silky and tender. Pressure cooking is faster, though you may lose a little bit of the tenderness. If you're going for the pressure cook method, be sure to get a pork shoulder or pork butt, as opposed to a pork loin.

What is the equivalent of 4 hours in the slow cooker in the Instant Pot? ›

Generally, if your slow cooker meat, soup, or stew recipe calls for 8 hours on the low setting or about 4 hours on the high setting, it should be fully cooked in about 25 to 30 minutes in the Instant Pot. For chicken or turkey, use the 15-minute poultry button. While volume doesn't matter, density does.

What is the secret ingredient to tenderize meat? ›

Whether hosting a holiday cookout, serving up some stir-fry or tackling game meats, baking soda is the go-to meat tenderizer to help make your steak, chicken or turkey silkier, juicier and yummier.

What does the egg do in meatloaf? ›

Eggs Add Structure

Egg yolks, which are mostly water but contain a good amount of protein and fat, add flavor, richness, and moisture. They also help bind the meat together and get the loaf to set in a stable form without the need to overwork the meat.

Are you supposed to drain the grease from meatloaf? ›

Let the loaf cool for at least 15 minutes before serving. If you baked the meatloaf in a loaf pan, carefully drain off the liquid fat before transferring the meatloaf to a clean cutting board. Cut into thick slices and serve.

Can I leave my Instant Pot on slow cook unattended? ›

You can leave your Instant Pot unattended when using it to slow-cook food such as chicken bone broth.

Can I get rid of my slow cooker if I have an Instant Pot? ›

If you don't do a lot of slow-cooking, you might be able to get away with using it for occasional dishes. The Instant Pot is narrower and taller than most slow cookers and also only heats on the bottom, whereas slow cookers may have an additional band around the perimeter of the insert.

Is the Instant Pot Pro a good slow cooker? ›

We've long recommended the Instant Pot Pro as one of the best countertop multi-cookers and the slow cooker function works fairly well. Temperatures peaked at 205°F and stayed there after three hours, cooking the dried beans to a perfectly creamy and buttery consistency.

How to slow cook without a slow cooker? ›

If you don't have a slow cooker, you can slow cook right on stovetop using a cooking pot that has a heavy build (like a Dutch oven) so it can disperse heat evenly to the food cooking inside. You should cover it well with a lid, keep the heat low and keep checking food in between so it does not run out of liquid.
