With Labor Day around the corner, I thought it would be awesome to supply you with a yummy and super healthy dish that is alsoeasy to pack. And after you master this salad, try out my tabouli salad recipe, another crowd pleaser!

The only pre-prep with this dish is to be sure to soak the quinoa overnight. Then just finalize the rest of the recipe in the morning or early afternoon. It tastes great at room temp, so it’s perfect to bring to the barbeque, pool party, park or beach!

Pair with a leafy green salad, and you have a complete meal. It’s ALWAYS a great idea to bring a healthy dish to an event to share. That way you can stay on track and it’s a non-threatening way to share with family and friendly on how you like to eat now to feel your best. Who knows, maybe you’ll make some brand-new quinoa lovers!

Quinoa, Avocado, and Corn Salad Recipe

Makes 6 servings

Ingredients

  • Base:
  • - Raw kernels of 2 ears of corn shaved right from cob
  • - 2 avocados sliced and cut into 1” pieces
  • - 1 1/2 cups dry quinoa
  • - 3 Tbs. red onion finely chopped
  • Dressing:
  • - 1 Tbs. lemon juice
  • - 1 Tbs. olive oil
  • - 2 Tbs. low-sodium tamari
  • - 1 Tbs. brown rice vinegar

Instructions

  • Pre-prep: Be sure to soak the quinoa overnight in water and rinse well before using.

  • In a saucepan place 2 cups of water and bring to a boil. Reduce heat and add the quinoa to the hot water, and simmer until the water is absorbed and the grains become translucent soft (about 10-15 minutes). Pour through a strainer and set to the side in a bowl.

  • Blend all the dressing ingredients together until smooth in a blender, or simply add them to a bowl and whisk well with a fork.

  • Shave the kernels of raw corn right off the cob with a large knife, and add to the quinoa along with the avocadoes and chopped onion. Mix well.

  • Pour the dressing on top of the mixture and mix well again. Enjoy this yummy dish with relish!

    Hi Kimberly,
    I looove quinoa and intruduced it to some of my friends and they love it too. I usually eat mine with veggies like carrots and broccoli and some spices like turmeric. I also put one sunny side up egg on top of it. Delicious!!! :) I will try to make it your way next time as I am big avocado fan :) Btw, I started to read your blog just a couple weeks ago and I love it. I’m trying to cut out the dairy from my diet but can’t let it go completely yet :) I have made the almond milk the other day (my roommate looked at me like I’m crazy lol). it came out great and I am using it in my smoothies. Excited to read new stuff every time I open your blog, Can’t wait for more to come! :)

    This recipe is just missing the suggestion that it should preferably be organic – no one needs GMO corn in their diet and even so called organic is now highly questionable here in the USA. There are better alternatives for this recipe like cherry tomatoes.

    If I am allergic to yeast in the brown rice vinegar can I substitute that for Braggs amino’s in the dressing Kimberly.

    Is there anyway I can obtain the Caloric breakdown of this recipe? It sounds great! I would just have to leave out the Avocado (I know it’s super healthy but I just do not like them at all)!

    Yummm. I follow most of your suggestions and have tried quinoa on numerous occasions but just have not been that fond of it quite honestly. This salad looks so good I may give it another try. : )

    I recently made this recipe from your book, and we loved it! We were slightly hesitant initially since neither of us had raw corn before, but it was so delicious and super easy to prepare.

    Question for you, would you consider lemon and lime to be interchangeable in recipes?

    I brought this to work for lunch today. I did not taste it until I added the dressing at lunchtime, so I was taking a risk:) IT IS SO GOOD. I didn’t have brown rice vinegar so I used white rice vinegar instead. I highly recommend this recipe.

    Great little recipe! One small change.. why soak quinoa overnight? Rinse and cook. I don’t know about most people, but I sure as hell ain’t soaking quinoa overnight its just pointless extra hassle.

      Kim explains in her books why it is important to soak it overnight. She says that this removes the phytic acid that inhibits mineral absorption.
