Weight Watchers 7 Layer Dip - Recipe Diaries (1)

Last week on Instagram WW had a challenge going all week long and the first day you were supposed to share your favorite zero point recipe. ##WW5FavoritesChallenge. This challenge made me change up my blog posts for the next couple of weeks because of all the yummy zero point recipes I’ve been seeing. This dip is not really zero but it CAN be zero depending on the type of cheese used.

7 layer dip is LOADED with lots of zero point ingredients such as fat-free refried beans, pico de gallo (my favorite), romaine lettuce, and greek yogurt. I mixed my plain greek yogurt with a couple of teaspoon of taco seasoning and spread that on top of the beans. I then added about 1 oz of reduced fat cheddar and finished it off with some romaine lettuce, pico de gallo, and scallions. It was so good served with some Tostitos scoops for lunch and it was very filling.

7 layer dip makes a LOT of servings for like 8 or 12 people. For 1 or 2 servings, I really had to scale it down. This recipe is perfect to share or eat just by yourself or with a friend!

How to make 7 Layer Dip

  1. Spread ¼ of the beans on to a small plate.
  2. Mix together the Greek yogurt and taco seasoning in a bowl. Spread that on to the top of the beans.
  3. Top with cheese, romaine, pico de Gallo and scallions.
  4. Recipe for pico de gallo: 4 roma tomatoes (diced), 1 small onion (diced), 2 tablespoons of chopped cilantro, ½ green bell pepper, juice of 1 lime. Add all ingredients into a bowl and mix together thoroughly.

Ingredients for 7 layer dip

Beans - Any type of bean on WW is zero points. That even includes fat-free refried beans.

Greek Yogurt - Greek yogurt is an awesome substitute for sour cream on WW. It tastes almost exactly like it and I can’t even tell the difference. Make your own homemade taco seasoning or use a seasoning packet.

Cheese - Use Kraft Fat-free cheddar cheese to make this dip completely zero points. ¼ cup is zero points. You don’t need to melt the cheese or anything in this dish so I think that would be completely fine to use.

Lettuce - Romaine or iceberg lettuce is great for this.

Pico de gallo - Pico de gallo is my ABSOLUTE favorite zero point and I just love it on top of this dip. So, so good. See my recipe above for pico de gallo.

Scallions - Can sub more onions or chives if you don’t have scallions

Chips - Good thins corn ones 41 for 3 pts, Bite size Tostitos chips are 24 for 4 points, Tostitos is 24 chips for 4 points
