By now, most of you know that I love a good dessert! I was floating around on Pinterest one day and came across a tasty looking cupcake that I just had to try, and make my own twist to it. This recipe is basically a brownie like cake for the bottom layer with cake mix for the next layer, and topped with frosting. The ingredients come from this Brownie Batter + Cupcake recipe on allrecipes.

I found that the specific ingredients used in the brownie batter (and portions) make the brownie more cake-like, which is very fitting in this yummy recipe! I made two cakes for my son’s baptism, and shared it with family. One cake was strawberry cake on top of brownie mixture and the other was a confetti cake on top of brownie. The pictured cake is my confetti cake with confetti sprinkles to match. They were both a big hit – and there were not any leftovers! Here goes it:

Brownie + Cake Recipe = Heaven!

Ingredients

  • 1 (19.5 ounce) package brownie mix
  • 2 eggs
  • ½ cup canola oil
  • ¼ cup water
  • 1 package white cake mix
  • 2 Tbs canola oil
  • 1⅓ cups water
  • 3 egg whites

Instructions

  1. Preheat oven to 350 F.
  2. Stir brownie mix, 2 eggs, ½ cup canola oil, and ¼ cup water in a bowl. Just as with any brownie recipe, only stir until fully incorporated. I wouldn't use an electric mixer for the brownie batter. Set aside
  3. With a mixer, mix 2 tablespoons canola oil, 1⅓ cup water, 3 egg whites and cake mix in a large bowl on low speed until combined. Then mix on medium speed for 2 minutes.
  4. Pour brownie batter into a greased 9x13 baking dish. Carefully pour cake batter over the brownie batter. (I almost wonder if it would work to swirl the two with a knife!)
  5. Bake in the preheated oven until golden and the tops spring back when lightly pressed - about 20 minutes. You will know it is finished if a toothpick inserted comes out clean. I personally don't mind the brownie batter being a little underdone.
  6. Top with your favorite frosting and garnish if desired.

This really is the best of both worlds – chocolate brownies and cake + Frosting!!

  • Em, I assume I add the white cake mix with the #3 direction. You might want to change your directions a little. I’m pretty sure anyone that knows how to bake will know what you mean, but there might be a novice out there who will have a real mess on her hands if she doesn’t read the whole recipe first and realize the white cake mix it missing. Thanks for the recipe though. I’m alway looking for quick baking recipes cuz I have no imagination when it comes to baking.

  • Do you think I could possibly bake the brownies for a bit and then put the cake mix on top? I have made this before and loved it,but husband thought brownies were a bit sticky,What do you recommend ? Thank you,I want to bake this tomorrow.

  • Did you make this particular recipe before Dee? You could always try it and see if it works. I don’t recall my brownies being very sticky when I made them.

  • Totally followed recipe and after 20 minutes cake under top layer that was baked was just batter. Cooked additional 10 minutes, and still wouldn’t bake the center. I did put the unbaked cake batter over the unbaked brownie batter. Was that wrong? Could just eat corners, had to throw out the rest. Darn! Was looking forward to it!

  • Agree with Cathy from October 23, 2017. Still baking at 40 minutes…pretty sure the brownie layer will be way over baked. Cake layer super under baked. Seemed like way too much liquids combined with the cake mix?

  • 20 min is no where near enough baking time. I had mine in for 40 min and it was still liquid. I’ve increased the heat and cooking it longer.

  • What did you ladies do to fix it? Im presently baking mine now and realize I have the same problem as you. Maybe it’s the brand of cake batter we used? Mine is Betty Crocker & it required 1cup of water! I was following the directions on another website and that one called for 2 round cake pans, divided… where I’m only using a cake pan. That’s what I thought my problem was so I decided to search for another recipe and here iam… this is terrible! It’s for my BF birthday!

  • Followed recipe exactly. 20 minutes was definitely not enough, could b the baking dish I’m using. I had mine in for 1hr 10min. Didn’t burn, still moist.

  • The pan definitely could have something to do with but I’m glad it didn’t burn!
